Once a bottle of wine has been uncorked, the evil air and its legions of bacteria will immediately get to work on souring the wine. A simple way to help preserve that left over half a bottle of wine until tomorrow night is to pour the leftover wine out of the 750ml bottle into a clean 350ml bottle. The smaller bottle is a much less friendly breeding ground for the bacteria (which like lots of oxygen). Of course, if the wine originally came in a gallon jug, these steps are unnecessary. Simply screw the cap back on, and return the wine to that cool spot on the floor next to your bed.
